Yams with Marshmallows
To make this recipe you don’t need to peal and bake Yams in the oven which can seem to take forever. You just need a few ingredients and you’ll save a lot of time. First you will need the following:
1 Large Can of Yams or Sweet Potatoes(Good Brand)
1 1/2 Cups Mini Marshmallows
1/2 Cup Sugar
Open Yams and pour juice in a pot and add sugar. Simmer on medium heat for about 5 to 10 minutes stirring constantly until juice thickens slightly. It should coat the spoon. Add Yams and cook for another 10 minutes or so until heated through. Remove from heat and pour into a serving Bowl and add 1 cup of the Marshmallows. Fold gently a few times then add remaining Marshmallows on top and serve warm.

Preparing, Cooking and Storing Okra!
Preparing the Okra:
1. Wash it. If you wash it under water you’ll need to dry it thoroughly before cutting. Otherwise it could get a little gooey. You can just use a damp dishcloth or paper towels to wipe them clean.
2. Next step is to cut it. I chop each end off then chop it into about 1/4 to 1/2 inch pieces.
Note: Cut only Tender Okra…If the okra is hard and crunchy when you cut into it then don’t use it (It will be hard to eat it when cooked).
Cooking:
Place all chopped okra into a large dutch oven and pour 1/4 to 1/3 cup cooking oil over top and stir. Cover and place into oven at 300 degrees until cooked approximately 3 hours. Stir every 15 to 20 minutes. Ovens vary so if it appears to be cooking too fast lower oven to 275 degrees. It is much better to cook it slowly. Let stand to cool for a few hours.
Note: The Okra is cooked when it is smooth and no longer slimy.
Storing:
Fill 1 Quart Freezer bags about 3/4′s full of okra. Flatten out and get all the air out and seal. Store in freezer until you are ready to eat. The amount of bags you yield will depend on how big of a batch you cooked. I got 6 out of a large oblong dutch oven.

Quick Mild Homemade Chili
I love LOVE Chili. But like some folks the spice can be a little too much for me — Yes, even for this Cajun Girl. So I came up with my own recipe for a Milder version. You could add as much spice as you want to this recipe to give it a bigger punch of heat. That’s what I love about it. It’s very versatile.

Banana Pudding
Banana Pudding is one our Family’s favorites. This Recipe is simple and quick to make. It’s a great dessert to bring to a Pot Luck, School Function or a Backyard Barbecue.
2 Large Boxes Vanilla Pudding Mix
Milk
3 or 4 Bananas
1 Box Vanilla Wafers
Follow Directions to prepare pudding and set aside. In a 13 x 9 inch Cake Pan layer cookies on bottom. Slice 1 and a half or 2 bananas and layer on top of cookies. Then spread half of pudding on top. Again add another layer of cookies and bananas then pudding. Top with cool whip and serve. Cover and store in Refrigerator.

Chocolate Cream Pie
Here is a quick way to whip up a Chocolate Pie for the 4th of July!
1 Graham Cracker Pie Shell (I use the one with the 2 extra Servings)
2 3.9 Oz Size Boxes Instant Chocolate Pudding
Milk (according to Package)
1 package Cream Cheese
1 12 oz Container Whipped Topping
Berries (optional)
Allow Cream Cheese to soften at room Temperature. Add half container of Whipped Topping and blend using a Hand Mixer or Food Processor until smooth and creamy. Poor into pie shell. Prepare pudding according to directions on box then smooth over cream cheese layer. Store in refridgerator until time to serve then top with remaining Whipped Topping and Berries.
