Quick and Simple Chocolate Fudge

This is one of my favorite Recipes for the Holidays. It’s so easy to whip up a batch for Parties and Get-Togethers.

1 Stick Butter
3 Cups Sugar
2/3 cup Cocoa
1/2 cup Evaporated Milk
1/2 Teaspoon Salt
1 Teaspoon Vanilla
1/2 Cup Peanut Butter
1/2 Cup chopped Pecans or Walnuts

Combine sugar, cocoa, milk and salt in a 3-4 quart sauce pot. Mix well and add stick of butter. Stir constantly. Bring to a boil over medium heat and let boil for approximately 5 minutes or until softball stage. Remove from heat and add vanilla, peanut butter and nuts. Beat until it loses its shine and pour into a 7 x 11 inch pan or large plate. Cool and cut into squares.

Chocolate Chip Christmas Cookies

In a medium bowl combine the following ingredients and set aside.

2 2/3 Cup Flour
1 1/4 teaspoon Baking Soda
1 cup oatmeal
1 teaspoon Salt

In a large Bowl -

1 cup Dk Brown Sugar
1/2 cup sugar
2 sticks or 1 cup butter (softened not melted)

Mix until fluffy then add-

2 Eggs
2 teaspoons Vanilla

Mix until combined then add a quarter of the flour mixture and mix. Add the rest of the flour a quarter at a time until blended well. Then add the following-

8oz chocolate chips
8oz white chocolate chips
1 cup chopped pecans or walnuts

Spoon cookies on an ungreased cookie sheet and bake at 350 degrees for 15 minutes or until done.

You may double this recipe or make two batches depending on how many you need. One recipe usually makes 3-4 dozen big cookies. You may also decorate them by adding some red and green sprinkles to the tops before baking them.

This recipe can also be used to make one large cookie and cut in 1-2 inch squares.
