Fig Cake

Don’t know what to do with the figs you decided to freeze this summer? Tired of Jam and pie? Then why not make a Fig cake? This yummy recipe makes for a great snack cake for dessert or eat it with cup of Coffee for breakfast. Figs are another great summertime favorite! So why not bake a Fig Cake tonight?

1/2 Cup Oil
1/2 Cup Brown Sugar
2 Eggs
1 Teaspoon Salt
1 1/2 Teaspoon Vanilla
2 3/4 Cups Flour
2 Teaspoons Baking Pdr.
1/2 Cup Buttermilk
1 Quart Figs
1 Teaspoon Soda

Add all the above ingredients together and mix well by hand. Poor into a well greased black iron skillet or a 13×9 inch pan. Bake at 350 degrees for about 40-45 minutes.

HINTS:

Don’t have buttermilk? You can use 1 teaspoon vinegar into a 1/2 cup
regular milk to substitute.
