Pecan Praline Candy Recipe

Peanut Butter Cookies

There are many variations of Peanut Butter Cookies out there. I like them plain. This one is quick and simple. You may add chocolate chips, nuts or candies to them if you wish.

1 1/4 Cup Flour
1/4 tsp Baking Soda
6 Tbsp Butter - (softened, not melted)
2 Tbsp Shortening*
1 Egg
1 Tsp Vanilla
1/2 cup Peanut Butter
1/2 cup sugar or light brown sugar
2/3 cup Chopped Peanuts (optional)

Preheat oven to 350 degrees. Cream butter, shortening and sugar until light. Add egg, peanut butter and vanilla and beat until fluffy. Combine flour and baking soda and stir into sugar and butter mixture a little at a time until all combined. Stir in peanuts. Drop by spoonfuls onto a cookie sheet. With a fork dipped into water press into each cookie vertically and horizontally. Bake for approximately 10-12 minutes. Makes about 2 1/2 dozen cookies.

This Recipe can also be doubled to make a larger batch.

Notes: *1 stick of butter or margarine can be used instead of the combination of butter and shortening.
