Good Day Everyone!
I just wanted to quickly update you on the “Big Move to our new domain.” Everything is progressing albeit slowly. But I do anticipate revealing the new site next month! Yeah!
Meanwhile I wanted to pull out a few favorites from the Archives. I have re-started my Low-Carb Diet so that got me thinking about Meal Options. Here are a few. As I start experimenting in the Kitchen — I will post any new Low Carb Recipes that I come up with.

Wow, I can’t believe Easter is only just over a week away. I am looking forward to it although I still have no idea what I am going to prepare for the Family Gathering. I have some really good news that I wanted to share with everyone. I have purchased a Domain name for this blog so we are going to be moving soon. I’m working on the New Site as we speak so I am hoping to launch sometime in May. I will post about it again when I have a better idea of the launch date. The site will feature a new Theme as well as some Contests and other goodies! It will be Bigger and Better.

I love this Recipe! It’s great for Lunch or Dinner. It’s very simple to make too. If you use this Recipe please let us know what you think!
2-4 Catfish Fillets
1 Lemon
1/2 of Onion (sliced) or
1 sliced Shallot
2 tbs chopped green onion
1/2 of red bell pepper sliced
1/4 cup Italian Bread Crumbs
Extra Virgin Olive Oil
Salt and Pepper to Taste
Place two Fillets side by side in a sheet of Heavy Duty Foil. Squeeze each with a little lemon juice. Top each Fillet with Onions/Shallots, Bell Pepper and Green Onions. Sprinkle with a tablespoon of Bread Crumbs and drizzle Olive Oil over each piece. Fold foil over and seal loosely. Place on a Cookie Sheet then bake at 350 degrees for about 20-30 minutes. Open foil and bake another 5 minutes. Fish should be cooked through and flaky.
