Low Carb Meal Options and Update

Good Day Everyone!

I just wanted to quickly update you on the “Big Move to our new domain.”  Everything is progressing albeit slowly.  But I do anticipate revealing the new site next month! Yeah!

Meanwhile I wanted to pull out a few favorites from the Archives.  I have re-started my Low-Carb Diet so that got me thinking about Meal Options.  Here are a few.  As I start experimenting in the Kitchen — I will post any new Low Carb Recipes that I come up with.

Chunky Tuna SaladI love to eat this on Low Carb Tortillas!

Low Carb Taco Salad – I think it’s better than the real thing!

Low Carb Cream Cheese Dessert – So Yummy!

Chunky Tuna Salad

1 can Tuna Fish
2 T Onion (finely chopped)
2 T Celery (chopped)
2 T Sweet Relish*(optional: see below)
3 Boiled Eggs (diced)
1 tsp Lemon Juice
1/3 cup Mayonnaise
1/2 tsp Mustard (optional)
Salt and Pepper to taste

Drain Tuna and break fish up with a fork. Add remaining ingredients. Chill in a tightly covered plastic bowl in refrigerator. Serve with Lettuce or make sandwich’s.

*For a Low Carb Alternative: Replace Sweet pickles with Sugar Free Relish or Dill Relish. Can be served on Low Carb Bread or my Favorite… Low Carb Whole Wheat Tortillas!! Very Yummy!

Chicken Fajita Salad – Recipe

It’s that time of year again when everyone is making a resolution to eat healthy and lose weight. I don’t know about you but I make the same one every year. Here is a great recipe to liven up your salad! This Recipe makes a great Dinner Salad big enough for 2 or 3 people. Enjoy!

1/2 Pound Fajita Chicken or sliced chicken tenders
1/2 Onion
4 Cups iceberg and Romaine lettuce
1 Cup chopped tomatoes
1 Chopped cucumber
Shredded Parmesan cheese
Whole Wheat Croutons
Italian or Caesar Dressing

Stir fry chicken and onions in oil until done. In a large bowl add all remaining ingredients and toss with dressing. Add chicken and serve.

Low Carb Taco Salad Recipe

This recipe is so good when you can’t have the real thing. Actually, you probably won’t even notice it is missing the tortilla shells.

1/2 Pound Ground Beef
1/4 cup Chopped Onion
1/2 cup Sugar Free Tomato Sauce
1/4 water
Salt & Pepper
Chilli Powder
Garlic Powder
Shredded Lettuce
Cheddar or Mixed Cheese
1 Teaspoon Sour Cream

Brown ground beef, drain, then add onions and saute. Add tomato sauce, water, and seasonings to taste. Simmer for five minutes. Serve with shredded lettuce, cheese and top with sour cream.
