Thanksgiving — Cajun Style

A Cajun Thanksgiving at our Home is not unlike every other Thanksgiving menu except for a few Dishes.  First thing on the Table…Cajun Rice Dressing.  It just wouldn’t be Thanksgiving at our house without Dirty Rice.  My Mom was the best Cook in the world(aren’t all Mom’s?) and she could tell you how hard it was to make a superior Rice Dressing.  She came up with this alternative years ago to help speed up the process.  It always came out tasting like Boudin that’s when we knew it was gonna be awesome!

Second thing we enjoy is Maque Choux (Mock Shoe) or smothered Corn.

10 ears fresh corn or 1 large bag frozen corn(thawed)
1 onion chopped
1/2 bell pepper chopped
1 clove garlic(minced)
1/2 cup chopped chives
1/3 pound bacon chopped
1 smalled can crushed tomatoes(drained)
2 T Milk or half and half
Salt and Pepper to taste

Cut corn off of cobs, meanwhile fry bacon pieces in a skillet until almost cooked but not crispy then add onions, pepper and garlic and saute about 4 or 5 minutes. Add fresh corn and continue to saute for about 10 minutes on a Medium/low heat.  Add tomatoes and milk and continue to cook on low heat for another 15 minutes.

These great recipes in combination with baked Turkey, sweet potatoes with marshmellows, green beans and all of the other usual Thanksgiving favorites are what round off a great Cajun Thanksgiving Meal at our house.  Oh and don’t forget the wish bone chere’.

Bacon Frittata

3-4 Eggs
1 T Half-n-Half or Milk
Salt & Pepper (to taste)
3 Slices of Bacon (cut into pieces)
1/4 cup diced Onions
1 T Chopped Sweet Roasted Red Peppers(Jar)
1 T diced Green Bell Peppers
1 diced Green Onion
1/4 cup shredded Cheddar Cheese

Fry Bacon in an Oven-Safe Skillet until crisp. Drain fat from pan. Add Onions and Bell Pepper and saute on medium-low heat until onions are clear. Add Green Onion and Red Peppers and saute for a minute.

Whisk together Eggs, Half-n-Half and Seasonings in a small bowl then poor over Bacon mixture. Continue cooking a few minutes until edges begin to cook and pull away from sides. Place in the oven on 350 degrees until Eggs are cooked but not dry. Top with Cheese and continue baking in oven until cheese is melted.

Let cool for about 10-15 minutes before cutting and serving. Makes 2 or 3 servings. Or eat half for Supper and save the rest for Breakfast!!

Note: You can also add veggies like chopped Broccoli or Spinach to this recipe. Enjoy!

Cabbage and Chicken Stir fry

Stir fry is one of my favorite meals because there are so many different combinations and variations. I really love this recipe. It so simple and quick to make. Incidentally, the cherry tomatoes in the photo are from my Garden. They were the first to produce and were so yummy!

The following serves 2:

1/2 large onion (chopped)
2 tbs chopped bell pepper
1/3 cup chopped Green Onions
2 cloves garlic (minced)
1 cup chopped Cabbage
1/4 cup Shredded Carrots
1/2 lb chopped boneless chicken
Salt and Pepper to taste
2 tsp Soy Sauce
EVOO (Extra Virgin Olive Oil)

Heat about 2 tbs EVOO in a large skillet or Wok. Add chicken and seasonings and brown. Add onions and bell pepper and cook for about 3 minutes then add carrots, cabbage, garlic, green onions and fry until chicken is cooked and cabbage and onions are clear/soft. Add soy sauce and cook a minute longer.

Serve as is or add some noodles, fresh tomatoes or grilled pineapple.

Grow your own Food

There’s something good to be said about growing your own vegetable Garden. I am no expert but it really isn’t all that difficult. I am in the South where it pretty much feels like Summer already but if you have not started a small Garden it isn’t too late.

All you need is a few rows of dirt mixed with some good quality top soil. Then make a trip to your local Garden Center and purchased some Tomato plants, Cucumbers, Beans, Herbs and whatever else you like. Plant and watch them grow.

Okay, maybe it isn’t THAT simple. You will need to water your garden everyday or every other day depending on how hot and dry your climate and what you plant. You can find loads of information about Gardening online just by doing a search on your favorite Search Engine.

The rewards of growing your own vegetables are so great! Not only do you get some Sun and Exercise but you will have veggies that you won’t need to buy in the store. You save money and most of the time you get vegetables that taste a lot better than store bought Produce.

Of course there are no guarantees that your garden will grow perfectly. If neglected it will not produce good results. The Weather can be a Huge factor too. Wind, excessive rains or heat can damage them. These things happen but it is so worth trying even if you have never planted a garden before.
